Chipotle Ranch Wings

Ingredients

  • 1 dozen whole wings
  • 1/2 cup Blue Plate Mayonnaise
  • 1/4 cup Hidden Valley Ranch Seasoning (not packet)
  • 1 Tablespoon ground chipotle pepper
  • 2 Tablespoons Killer Hogs TX Rub
  • 1/2 cup buffalo wing sauce
  • 1/2 cup ranch dressing

Directions

  1. Prepare pellet smoker or any other grill for indirect cooking at 400°F.
  2. Pat excess moisture from the wings using a paper towel. 
  3. Add the ranch seasoning and chipotle pepper to a dredge shaker and stir to combine.
  4. Brush Blue Plate mayo on the outside of each wing and season with Ranch/chipotle mixture followed by a light coat of the TX rub.
  5. Place the wings on the smoker and cook for 45 min to 1 hour or until the internal temperature reaches a minimum of 165°F.  I highly recommend taking the wings to 195°F for better texture. 
  6. Combine the buffalo sauce and ranch dressing in a bowl and serve with the wings for dipping.

I’ve been making this recipe for over 2 years. Never fails. Replace the Chipolte ranch rub with whatever run you want. I’ve dabbled with voodoo, lemon pepper, several spicy rubs, all have been fantastic. The key is the mayo, the kosher salt, and cooking over 165 to get them crispy.
