BBQ Chicken Littles
I originally tried these at a small-town gas station. They were serving these bacon-wrapped chicken skewers for lunch - and they were delicious! I came home and had to re-create them on my grill... and of course, I had to make them even better by letting them dry brine and caramelizing a sweet and sticky bbq sauce on the outside. Everyone is going to love these!

Ingredients
- 12 Boneless Skinless Thighs
- 1/4 cup Swine Life Mississippi Grind
- 12 Slices of Bacon
- 2 Tablespoons Killer Hogs The BBQ Rub
- 1/4 cup Brown Sugar
- 1 cup Killer Hogs The BBQ Sauce
- wooden skewers
Directions
- Trim fat and cut the thighs into halves. Season with Swine Life Mississippi Grind on all sides and dry brine for 30 minutes.
- Cut bacon in half. Wrap each chicken piece with a half slice of bacon and skewer.
- Season the skewers with Killer Hogs The BBQ Rub and brown sugar.
- Place on 325 degree pellet grill for 45 minutes. Glaze with Killer Hogs The BBQ Sauce and continue to cook until internal temp hits 175 degrees.
- Serve with additional BBQ Sauce for dipping.

Made these today on an Old Smokey 22" smoker. A very big hit with the family!
We made these and they are delicious!!!! We put the dry rub on the day before we smoked them and I partially cooked the bacon before wrapping. Taking them to a football Sunday Funday and I am sure they’ll be a hit!!!!!
