Ingredients
- 2 cups fresh mixed berries (black berries, blueberries, & raspberries)
- 1 1/4 cup sugar
- 1 Tablespoon corn starch
- Juice from 1/2 fresh lemon
- 1 cup self rising flour
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 stick butter
- whipped topping OR ice cream for serving
Directions
- Prepare pellet grill for indirect cooking at 350 degrees.
- Pour berries into a large bowl and add 1/4 cup sugar, corn starch, and lemon juice. Gently fold the mixture and let the berries set for at least 10-15 minutes.
- In a separate mixing bowl combine flour, remaining sugar, milk, and vanilla extract until it forms a batter.
- Grease a 10" iron skillet with butter and place on the pit. Add a stick of butter and allow it to melt.
- Pour the batter into the skillet and spoon the berry mixture over the top.
- Cook the cobbler for 45 minutes to 1 hour or until the batter mixture comes to the top and turns brown.
- Serve the cobbler with a big heap of whipped cream right on top.
