Summertime Berry Cobbler

Great recipe that is quick and easy - Summertime Berry Cobbler. It's not too sweet and it's perfect for a hot summer day. Serve with whip cream or ice cream...

Ingredients

  • 2 cups fresh mixed berries (black berries, blueberries, & raspberries)
  • 1 1/4 cup sugar
  • 1 Tablespoon corn starch
  • Juice from 1/2 fresh lemon
  • 1 cup self rising flour
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 stick butter
  • whipped topping OR ice cream for serving

Directions

  1. Prepare pellet grill for indirect cooking at 350 degrees.
  2. Pour berries into a large bowl and add 1/4 cup sugar, corn starch, and lemon juice.  Gently fold the mixture and let the berries set for at least 10-15 minutes.
  3. In a separate mixing bowl combine flour, remaining sugar, milk, and vanilla extract until it forms a batter.
  4. Grease a 10" iron skillet with butter and place on the pit.  Add a stick of butter and allow it to melt. 
  5. Pour the batter into the skillet and spoon the berry mixture over the top.
  6. Cook the cobbler for 45 minutes to 1 hour or until the batter mixture comes to the top and turns brown.
  7. Serve the cobbler with a big heap of whipped cream right on top.
