Smoked Meatloaf

Ingredients

2lbs Ground Chuck 80:20

2 cups Bread Crumbs

1 cup Onion diced

1 cup Tomato diced

1/4 cup Pimento Peppers diced

1/4 cup Parsley chopped

2 cloves Garlic minced

1 Tablespoon Killer Hogs The AP Rub
-
1 Egg slightly beaten
-
8 Slices Thick Cut bacon
-
1 cup Killer Hogs The BBQ Sauce
-
2 Tablespoons Brown Sugar
-
1 Tablespoon Dijon Mustard
-
1 Tablespoon Hot Sauce
BBQ Glaze
Directions
Prepare Yoder Pellet Smoker or other BBQ grill/smoker for indirect cooking at 350⁰.
In a large bowl combine ground beef, bread crumbs, onion, tomato, peppers, parsley, garlic, egg, and AP Rub. Mix well by hands to evenly distribute ingredients.
Spray mini loaf pan with vegetable cooking spray and line each cavity with a slice of bacon.
Fill each cavity with meat mixture.
Place pan in smoker and cook for 45 minutes or until internal temperature reaches 160⁰.
Carefully remove each mini meat loaf from pan and place on wire rack. Glaze with warm BBQ Glaze and return to the smoker for 15 minutes or until internal temp reaches 165⁰ minimum.
Remove from smoker and serve with mashed potatoes garnished with a pinch of finely chopped parsley
we have had several BBQs of which I call “ginny pig BBQs” Our friends love it they are always on board and come hungry they know they are always a 1st time make for us and we let them decide if we will be making the recipe again and 99 out of a 100 it’s a go, and we have used several of your recipes I have my fav and he has his, but I love to give my guest a treat I will be tying this soon as my other half Alan, isn’t really a meatloaf kinda guy but loves a cold sandwich if he wants me to get into BBQ with him I guess he will have to be patient it’s just a matter of who I’m inviting and when if my mother was still here I know she would love this she is the one that taught me how to make meatloaf. thanks Debra
