Smoked Chorizo Cheese Dip

Ingredients

  • 1lb White American Cheese
  • 1lb Velverta Queso Blanco Cheese
  • 1/2 stick butter
  • 1 cup milk
  • 2 cans diced green chilies
  • 1 teaspoon granulated garlic
  • 1 teaspoon ground cumin
  • 1lb Chorizo Sausage browned 
  • 1 teaspoon Malcom’s Grande Gringo Seasoning
  • 1 Tablespoon chopped cilantro

Directions

  1. Prepare grill or smoker for indirect cooking at 350 degrees. 
  2. Cube cheese into bite size portions. 
  3. In a grill safe pan add butter, milk, cheese, diced chiles with the juice, garlic, and cumin. 
  4. Place pan on the grill and cook for 35-40 minutes stirring often until cheese melts and dip is smooth.
  5. Add the browned chorizo sausage to the center of the dip and remove from grill. 
  6. Garnish with Grande Gringo seasoning and cilantro. Serve with with tortilla chips.
