Pimento Cheese

creamy, cool, classic Pimento Cheese recipe. You can serve it on white bread for a sandwich, serve it with crackers to dip... or you can do what I did and use it to top a burger!

Ingredients

  • 8oz block extra sharp cheddar cheese
  • 8oz block Vermont sharp cheddar cheese
  • 1/2 cup Blue Plate Mayonnaise
  • 1 small jar diced pimento (drained)
  • 1/4 cup diced pickled jalapeño
  • 2 Tablespoons juice from pickled jalapeño
  • 1 Tablespoon Killer Hogs AP Seasoning

Directions

  1. Grate both blocks of cheese using a box grater.
  2. Combine cheese, pimento, jalapeño, juice from jalapeño, and seasoning in a small bowl.  Stir to combine, cover with plastic wrap and refrigerate for a couple hours before serving.
