King Cake Bread Pudding
Two of my favorite things — King Cake and Bread Pudding... topped with a White Chocolate Rum Sauce. #delicious
1 King Cake (store bought)
4 Cups Heavy Cream
1 Cup Sugar
1 Bag White Chocolate Morsels
1/4 Cup Melted Butter
1 TSP Vanilla Extract
Prepare pellet grill for indirect cooking at 350 degrees.
Grease a 9x11” baking dish with butter.
Cut king cake into small pieces and place in a large mixing bowl. Pour heavy cream over cake and soak for 30 minutes.
Combine eggs, sugar, melted butter, and vanilla in a separate bowl. Add white chocolate morsels and stir to combine. Pour egg mixture over soaked king cake and stir to combine.
Pour mixture into baking dish and place on smoker for 1 hour or until top has browned and bread pudding has set.
Remove from smoker and drizzle with White Chocolate Rum Sauce (recipe below) and garnish with colored sugars.
White Chocolate Rum Sauce
- 1 Cup Heavy Cream
- 2 TBSP Butter
- 1 Package White Chocolate Morsels
- 1oz Dark Rum
- Melt butter in a sauce pot over medium heat. Add rum and continue to cook for 3-4 minutes until alcohol evaporated and butter begins to brown.
- Add heavy cream and warm until slight simmer. Remove from heat and add white chocolate morsels a little at a time continuously stirring until the entire pack has melted. Pour into jar until ready to use.
