Breakfast tacos that are extra cheesy, slightly spicy and extra delicious. This one can feed a crowd!
Grande Gringo Breakfast Tacos

Cooked on the Blackstone grill, I used sausage, egg, onions, peppers and a whole lot of cheese for these tasty tacos.

Ingredients

7 eggs

1/4 cup milk

1lb breakfast sausage

1 small onion - diced

1/2 green bell pepper - diced

1 fresh jalapeño pepper - diced

3 cups shredded cheese
-
2 teaspoons Grande Gringo Mexican Seasoning

10-12 flour tortilla shells - fajita size
Directions
Scramble the eggs with the milk.
Preheat black stone griddle to medium low heat.
Sauté the onions and peppers for 2-3 minutes then move over to cool side of griddle.
Brown the breakfast sausage and move it over next to vegetables.
Pour the egg mixture onto the griddle and season with Grande Gringo. When eggs are almost done top with half of the shredded cheese.
Combine the eggs, sausage, and vegetables and move to the side.
Place the tortillas on the griddle for 15-20 seconds and flip. Add the sausage and egg mixture to the top of each tortilla along with a little more shredded cheese. Use the spatula to fold each tortilla in half and carefully flip the taco over to grill both sides.
