- 1lb breakfast sausage
- 1 small onion - diced
- 1/2 green bell pepper - diced
- 1 fresh jalapeño pepper - diced

- 10-12 flour tortilla shells - fajita size
Directions
- Scramble the eggs with the milk.

- Sauté the onions and peppers for 2-3 minutes then move over to cool side of griddle.
- Brown the breakfast sausage and move it over next to vegetables.
- Pour the egg mixture onto the griddle and season with Grande Gringo. When eggs are almost done top with half of the shredded cheese.
- Combine the eggs, sausage, and vegetables and move to the side.
- Place the tortillas on the griddle for 15-20 seconds and flip. Add the sausage and egg mixture to the top of each tortilla along with a little more shredded cheese. Use the spatula to fold each tortilla in half and carefully flip the taco over to grill both sides.
