Double Sausage Breakfast Casserole

Ingredients

  • 2lbs breakfast sausage
  • 1 small white onion diced
  • 1 red bell pepper diced
  • 8oz sliced white button mushrooms
  • 1 package frozen hash brown potatoes 32oz - thawed 
  • 4 cups shredded cheese
  • 6 eggs
  • 1 Tablespoon Killer Hogs AP Seasoning
  • 1 cup heavy cream
  • 1 Tablespoon Killer Hogs Hot Sauce
  • 1 teaspoon salt
  • 1 teaspoon cracked black pepper
  • 3-4 Green onions

Directions

  1. Brown the breakfast sausage in a large skillet over medium-high heat. As the sausage cooks add the diced onion and red bell pepper. Cook for 2 minutes then add the sliced mushrooms. Use a paper towel to absorb excess grease and place the sausage mixture in a large bowl.
  2. Add the package of thawed hash brown potatoes and season with AP Seasoning. Stir 3 cups of shredded cheese and pour the mixture into a greased casserole dish.
  3. In a separate bowl whisk 6 eggs with the heavy cream and season with salt and black pepper. Pour the egg mixture over the casserole dish and place in a 350-degree pellet grill for 40 minutes. Top with the remaining cup of shredded cheese and continue to cook until the cheese is melted and bubbly about 10 more minutes.
  4. Serve with extra hot sauce and thinly sliced green onions.
