Butter Smoked Lobster Tails cooked in a Castiron Skillet

Ingredients

2-4 Lobster Tails (depending on size)
- 3 cloves garlic
- 2 sticks butter

¼ cup flat leaf parsley - chopped

1 Tablespoon Malcom’s King Craw Cajun Seasoning
Directions
- Prepare pellet grill for indirect cooking at 350 degrees.
Melt 1 stick butter with minced garlic, chopped parsley, and King Craw Cajun Seasoning in microwave safe dish.
Use kitchen shears to split top of lobster tail and carefully pull meat loose from shell and arrange over the top of the shell. Place the tails in a cast iron skillet and brush with butter mixture. Season with a little extra King Craw over the top. Cut the remaining stick of butter into pats and place alongside the tails in the skillet.
- Place cast iron skillet on grill and cook until internal temperature in the lobster is 140 degrees.
- Remove from the grill and garnish with parsley. Serve with warm french bread for dipping in the butter mixture.
