Italian Beef Sliders
Tender deli beef simmered in rich au jus, layered on Hawaiian rolls with peppers and mozzarella, then smoked until golden. These Italian Beef Sliders are perfect for game day or parties.

Ingredients
- 2 lbs thinly sliced deli roast beef
- 1 large sweet onion, thinly sliced
- 4–5 cloves garlic, chopped
- 1 box (32 oz) beef broth
- ½ bottle Johnny’s French Dip Au Jus

Malcom’s Italian Stallion Seasoning (or any Italian seasoning blend)
- 1 jar roasted red peppers, sliced
- 2 packs King’s Hawaiian sub rolls (about 16–20 sliders)

8–10 slices mozzarella cheese
- 1 stick butter, melted
Directions
Build the au jus base:
In a metal pan (or any smoker-safe dish), add sliced onion and chopped garlic. Season lightly with Italian Stallion seasoning. Pour in the beef broth and Johnny’s French Dip. Place the pan on a 350°F pellet grill for about 30 minutes until hot and simmering.
Add the beef:
Stir in the sliced deli roast beef, making sure it’s fully submerged. Let it ride on the pit for about 1 hour, soaking up smoke and flavor. Remove when the beef is hot and tender. Reserve the liquid—it’s your dipping sauce.
Assemble the sliders:
Split the Hawaiian sub rolls. Pile the hot beef on each bottom half. Top with roasted red peppers and a slice of mozzarella cheese. Cap with the top buns.
Butter bath:
Melt the butter and season it with more Italian Stallion seasoning. Brush generously over the tops of all the rolls.
Finish on the pit:
Place the sliders back on the grill at 350°F for about 15 minutes, just long enough for the cheese to melt and the tops to get golden.
Serve:
Slice, serve, and dip each slider in that reserved au jus.
Hello Malcolm. I love your recipes. Thank you. If you haven’t tried Louie’s Famous Italian Beef aujus, you have to give it a try. It’s sold packaged in foil envelope just like gravy packets. I’m Sicilian from Chicago and it’s a good seasoning for Italian beefs
