Burn 'em Down Chicken Sandwich

Ingredients
- 2 large chicken breasts
- 1 tsp salt
- 1 tsp black pepper
- 1 Tablespoon Frank’s Red Hot seasoning
- 1/2 cup Burn 'em Down Hot Sauce
- 1/4 cup melted butter
- 1 cup shredded pepper jack cheese
- Buns
- Lettuce
- Tomato
- Pickles
- Red Onion
- Blue Plate Mayonnaise
Directions
- Prepare charcoal grill for indirect cooking over med. high heat.
- Butterfly each chicken breast and season with salt, black pepper, and Franks seasoning.
- Place breasts on grill and cook on each side about 6 minutes.
- Combine melted butter and Burn ‘em Down sauce and brush on both sides of breast. Continue to cook for 1 minute each side.
- Place breast on iron skillet and top with cheese. Continue to cook until cheese melts over each breast and internal temperature reaches 165 degrees internally.
- To build the Sandwich: Spread mayo on each side of toasted bun, top with lettuce, tomato, red onion, and pickle slices. Place chicken breast over the veggies and top with upper bun.
